Here are a couple of my favorite recipes...and they are meals my family loves as well...this was such a great swap...FYI these both freeze well...just don't bake before freezing...on the muffins i freeze in the tin for a day then "pop" them out and put in a freezer bag...just thaw and bake...

Both look just yummy and like how you did the cards1 Perfect "pepper" paper for the enchiladas too. I may have to try that recipe as it looks good and I do love those things!
